Random Thoughts.....

So I have all these random thoughts that run through my mind all the time. I figure most people have them, maybe some more than others? None of them individually are worth spending more than a few seconds on, so I thought I would collect my thoughts here for anyone who wants to follow along. (good luck, ha)

First, is it sad, that I had to make a list on my phone of the random things I should blog about??? My memory is so bad! My dad just blogged about his memory and he is "knocking on 60!" I'm 30!!! What is going on! I heard on The Ticket how people in older generations are better than us in so many ways; work harder, smarter, problem solve better, etc, in my family, I think that is definitely true!

Second thought, don't you hate when you misspell something so bad that even spell check doesn't suggest the right word! ( I did that with definitely!)

Third, we went out to dinner last night and ate delicious food, BUT I think Chef's have it too easy. I could cook with butter, vegetable oil, and fry things but I choose not to and my food still taste good but is healthy! We pay so much money for going out to eat these days and it usually is so bad for us! Even salads are sometimes worse than a steak! I want to go to a restaurant that has healthy food, decent portions, and still tastes good! I know they exist but not in "Fort Worth, Texas" (said with a very country accent). 

Speaking of food, I eat healthy the majority of the time, but I might have one time a week that I eat "bad" food.  And I noticed that I crave that "bad" food for a day at least! Bad food truly is addicting and even if you try to change your pallet to not want those foods, if you give in once, the cravings return!! AHHHHHH:) I guess that is why God gave us self control!

I am almost off my rant on healthy stuff, but one more thing....I was reading in my excellent Marathon, You Can Do It book by Jeff Galloway given to me by my wonderful sister, Kassie, that women store fat in different ways than men. I had heard most of the things he said before, but one new thing was that women store fat in little pockets of their muscles. So from the outside they may not appear to be storing fat, but as those "pockets" fill up, then the rest of their body starts to store fat. This is really annoying because, if I would have known that eating 2 Chipotle burritos a day was being stored in muscles, then  I wouldn't have done it! But I couldn't SEE the fat, so I wasn't worried about it!! So annoying. I guess I shouldn't live by the philosophy that "if you can't see it, then it isn't there":) 

Moving on.... Have you tried to watch Prime Time television with young kids. It's impossible! We watch American Idol, the X-factor, and baseball with Aspen .... that's about it. Even "You Think You Can Dance" can be scandalous! One show that we found, Last Man Standing, with Tim Allen. It is pretty decent, very cheesy, but for the most part it's clean. It's definitely no Cosby Show, Family Ties, Full House, or even Home Improvement but it's as close as we can get these days! I would LOVE for one of the major networks to come out with a truly good family show. I think it would do well! 

I have realized that I have turned into a combination of my mom, my Mama, and my Nonna. I am not as amazing as any of these women, by far! Buy I tend to tear up over the smallest things, hearing a story from a friend, during a prayer, during church, watching a commercial, watching the news, watching Top Chef whatever!! (that's my mom and Mama) and then I'll be talking to my daughter about something the teacher got onto her for, and I totally agree with the teacher and tell my daughter "I hope you learned a lesson"(Nonna). I love it! I hope more of them will continue to flow out of me with age. 

Ok, I'll stop boring anyone who has continued to read all this! Sometimes I think I should write a book, because my imagination is so weird and huge, I think with some direction, it could be a great book.

Suburban Dilemmas

So I have a friend who has a twitter account called Suburban Dilemmas. She tweets random things that us middle class Americans get annoyed with or vent about, that are usually silly. For example, one tweet says, " My kindle battery died so I had to play on my iPhone." A lot of time they end in #ohthedilemma.... It's funny, but at the same time it really makes me think. It puts things in perspective, when I gripe about things or get annoyed with things that are not only trivial, but makes me sound like a "spoiled American."

I thought about this today, while I'm working from home (working like 2 hours), and we have electricians here to fix our pool lights. And I start feeling annoyed because I want to work out, but I can't leave the electricians here by themselves!! #Ohthedilemma! Ha Not only am I extremely lucky to have a wonderful home, a home with a pool, work from home, work very little, not to mention that I am healthy enough to work out, (I could go on and on about the ways I've been blessed) and yet I still get annoyed at the silliest things! God forgive me for being so selfish!!!

So the next time you want to gripe about something ask yourself, is this a "Suburban Dilemma" or a true dilemma?

Hope the people that read this (like two people) don't think am an awful person for confessing my selfishness;)

Day 2 of no spending

So tonight we are having baked sweet potatoes, tilapia (I had frozen in the freezer) with creole seasoning, and some rustic bread with pea pesto on them. I think I will eat my tilapia on top of my bread and pesto.... The true test is tomorrow.... we have officially run out of cereal so I am going to make pancakes from whole wheat flour but I need to disguise this so Aspen will eat them! So I found a Blueberry and Ricotta pancake recipe. Hopefully she will like it!

It's crazy how when you are trying to not spend money on food, how much you want to! I had to run some errands this morning and I wanted to stop and get fast food, I wanted to get frozen yogurt, I wanted everything! Even though I had yummy left overs at home. Which I ate, and they were even better the second time!

We had crazy weather here but thank God, all of our family is safe! Told you this would be a random blog:)

Trying to not be spoiled.....

Ok, so every week I go grocery shopping. I am very lucky in the fact that I normally can wait and do this on Mondays, after the crazy weekend. I love to cook, so I spend an hour or so on Monday morning or Sunday night, figuring out what new dishes I want to make!! I love trying new things and LOVE Giada (who I watch at least every week). ........But I noticed that I have a FULL pantry (and somehow a full fridge) full of food and I began to think......(scary thought if you know me). There are people not only in other countries or other states, but right here in my own city who would love to have the food that I have. So I told Matt, "we are going to go the whole week without buying groceries!!" Of course he was ok with me not spending money!!!, and he was good with this, as long as he still had yummy food for dinner every night;) So I decided this would make me not only appreciate everything I have, but also make me be more creative with my cooking.

We just finished dinner, and I must say....It was delicious! I made a spinach, prosciutto, and goat cheese souffle with a homemade crust (which only took like 15 minutes!). And a pasta primavera with the left over produce in my veggie drawer, that usually ends up going bad. I hate throwing out food, but it seems like I do, every week! So this week we will use it before it goes bad! Tomorrow's breakfast for Aspen will be either be one of our (in her word's "healthy") cereals, left over waffles, we have had in the freezer for ever!! or fruit. I guess this will also help her not be so picky! I'll let you know how it goes;)
